Hummus and Feta Balls with Marinated Cucumber and Tomato
With just three ingredients these hummus balls are a crowd-pleasing appetizer.

  1. In a food processor or magic bullet, quickly puree the feta cheese for 1 to 2 seconds. In a small bowl, mix hummus with the feta cheese until well combined. Place the hummus mixture in the freezer for 5-10 minutes or until slightly firm to allow for easier rolling.
  2. Prepare the cucumber by slicing into 1/4 inch rounds then slice each round into thirds. Placed sliced cucumbers and cherry tomatoes into a small bowl with olive oil, fresh dill, salt, and pepper. Stir well to combine and set aside.
  3. To make the hummus balls, measure out about 1 tsp of hummus mixture and roll into a ball between your hands. Place the hummus balls onto a non-stick baking pan and repeat until all of the hummus mixture is gone. Place the baking sheet in the freezer for 10 minutes.
  4. In a small bowl place 1 tsp of sesame seeds. Roll each ball in sesame seeds until completely covered, adding 1 tsp of seeds to the bowl as needed. Skewer one slice of cucumber, a tomato, and a hummus ball on a toothpick. Store in an airtight container until ready to serve.
