Pulled Pork Sweet Potato Hash

  1. In a large skillet, heat olive oil over medium-low heat. Add the sweet potatoes to the skillet, stirring to evenly coat with oil. Season with salt and pepper and cover. Allow the potatoes to cook for 10-12 minutes, stirring occasionally. Add the onion, rosemary, and garlic to the skillet and stir to combine, cook until potatoes are tender and slightly brown, another 8-10 minutes.
  2. Add the spinach and pulled pork to the skillet, stir to combine. Cook until spinach slightly wilts, about 2-3 minutes. Drizzle in the balsamic vinegar and stir. Create 4 wells in the hash pour a small amount of oil into each well. Crack one egg into each well and turn heat down to low and cover. Cook for 5-8 minutes until whites are set. Plate and serve with parsley.
