Preheat oven to 350°. Beat the oil and sugar together with a stand (or hand) mixer. Add the mashed bananas, egg, and vanilla and beat until well combined.
In a medium bowl, mix together flour, cinnamon, baking powder, baking soda, and salt. Add the dry ingredients slowly into the wet and mix on low just until evenly combined. Fold in the zucchini and chocolate chips with a spoon.
Place parchment paper unto a loaf pan, making sure to oil the sides not covered by the paper. Pour all of the batter into the loaf pan. Bake for 45-55 minutes or until a tooth pick comes out clean.
