I don’t know about you, but I can’t remember the last time I made a fresh salad in the middle of winter. In my opinion, there is nothing appetizing about a cold lettuce salad when it is below zero outside. Cold temps + cold meals = zero satisfaction. In the dead of winter, my meals just gotta be warm. So what’s a girl to do during the frigid winter months to get her veggies in?
Option 1: Roast, roast baby. (chop that veg and pop it in the oven – like these Brussels sprouts)
Option 2: So much soup. (Veggie loaded soups, like this Chicken and Black Bean Chili, are a weekly winter staple in our household)
Option 3: This Cilantro and Honey Lime Slaw. (I put this stuff on tacos, panini sandwiches, and pulled pork)
Now don’t get me wrong, I make this recipe all year long. I just love the crispness of the cabbage and all the flavors from the fresh herbs and lime juice. It is also worth mentioning how easy this side dish is to assemble. How easy you ask? I am talking prepped, tossed, and all cleaned up in just under 20 minutes.

- 3 cups red cabbage shredded
- 1 red bell pepper julienned
- 1/2 bunch cilantro chopped
- 3 green onions diced
- 1/2 cup carrots julienned
- 3 Tbsp fresh lime juice
- 2 Tbsp olive oil
- 1 Tbsp rice vinegar
- 2 tsp honey or 1 tsp sugar
- freshly gound black pepper to taste
- salt to taste

- Prep the slaw mix ingredients and combine in a large bowl. Whisk together the dressing ingredients and pour over the slaw. Gently toss all ingredients until well combined. Serve with cilantro garnish.
