The trees are budding and the grass is all of a sudden so very green. Could it be? Spring? Is that you? The sights and the scents are all pointing to one thing – it just might be time for patios and grilling! Ya-hoo! So let’s get to it – you need the perfect dip/grilled protein topper and this pineapple and black bean salsa, my friends, is it!
I can eat this stuff by the bowl full – preferably on a patio with an ice cold beverage near by. Just give me a bag of chips and watch me go. Yeah, it’s that good. There is just something about the sweetness of the pineapple mixed with the crunch of the bell peppers mix that with all of flavors of the cilantro and the lime juice – boom, perfection.
As I’ve mentioned, this Pineapple Black Bean Salsa is nearly perfect on it’s own as a dip. I must also say that this dip makes the perfect addition to any grain bowl (hello lunch nirvana) but it can also take grilled chicken, fish, or turkey burger to the next level. Long story short, this stuff will disappear right before your eyes.

- 2 cups diced pineapple
- 1 can black beans drained and rinsed
- 1/2 red bell pepper diced
- 1/2 cup cilantro chopped
- 1/4 cup red onion diced
- 2 Tbsp lime juice
- zest of one lime
- 1/4 tsp ground cumin
- salt and pepper to taste

- In a medium bowl, combine all ingredients and refrigerate for a few hours before serving. Enjoy!
