Edible cookie dough with only 5 ingredients?! It is almost too good to be true. These frozen gluten-free cookie dough bites are completely irresistible and are the perfect summer treat.
Raise your hand if you are anything like me and have a bit of a sweet tooth. For that reason, I rarely have sweets in the house. If I see it, I eat it.
I know I am not alone on this confectionery consumption phenomenon. Research has found individuals eat more when sweets are not only within reach but also simply – when in sight. One study looked at the average consumption of candy in the workplace. When the candy dish was visible, instead of tucked away in their drawer, participants ate 2.2 more candies each day.
So what can we do to make sure we aren’t mindlessly eating all the sweets in the house? One way would be to remove our favorite treats from the kitchen counter and place them in the cupboard or in the case of these little cookie dough cuties, into the freezer. Out of sight, out of mind.
It is finally time to reveal the big secret about these cookie dough bites.

- 1 1/4 cups canned chickpeas
- 2/3 cup peanut butter
- 1/4 cup honey
- 2 tsp vanilla extract
- 1/3 cup mini chocolate chips
Ingredients

- Rinse and drain the canned chickpeas and pat dry with a paper towel. In a food processor, combine chickpeas, peanut butter, honey, and vanilla extract until smooth. Stir in the chocolate chips.
- Using a teaspoon, measure out the dough and roll each into a bite-sized ball. Place each bite onto a cookie sheet until all dough is used, about 48 teaspoon sized bites. Place the cookie sheet into the freezer for 30 minutes until the dough is set. Serve frozen
- Store in a ziplock baggie or tupperware container in the freezer.
